Description
Tatsoi is a leafy green, somewhat sweet, mustardy and earthy, and has a rich scent. Both the leaves and stems are edible and can be used raw in salad or cooked. You can try sauteing, steaming, or stir-frying tatsoi.
It’s a great substitute for kale or spinach. It’s exceptionally high in micronutrients with almost twice as much calcium as milk. It’s also packed with vitamins C, A, and K, and has high levels of folate – a B vitamin. In addition, it’s a good source of potassium, a mineral vital for heart function.
Store it in a plastic bag in the hydrator drawer of your fridge, but it’s too delicate to freeze well.
