Delicious favorite of autumn. A good deal for the money, too, because butternut has a relatively small seed cavity but lots of “meat”. It can be used interchangeably with pumpkin, its close cousin and near taste-alike. In fact, it’s hard to tell the difference in a traditional “punkin'” pie. Butternut is also great for soups, casseroles and other oven dishes. It stores well, too — up to three months in a cool, dark place.
