Description
Baby bok choy is a delicate and sweeter version of its larger cousin, with very tender leaves and slender stalks. It can be used raw in salads or steamed, sautéed or stir-fried.
It contains vitamin C and E, along with beta-carotene. Unlike most other fruits and vegetables, it has the mineral selenium, which helps detoxify some cancer-causing compounds in the body. Selenium also prevents inflammation and decreases tumor growth rates.
It’s a good source of fiber, which keeps the bowel healthy and reduces the risk of colorectal cancer.
